  1. Sauté veggies: In a large pot, heat olive oil over medium heat. Cook onion 5 minutes until soft. Add garlic, jalapeño (if using), and green chiles; cook 1 minute more.
  2. Add chicken and liquids: Stir in chicken, beans, broth, cumin, paprika, salt, and pepper. Bring to a boil.
  3. Simmer: Reduce heat and simmer 25–30 minutes, until chicken is cooked through and tender.
  4. Shred chicken: Remove chicken and shred with two forks. Return to the pot.
