🍲 White Chicken Chili
This **White Chicken Chili** is a creamy, comforting twist on traditional chili — made with tender chicken, white beans, green chiles, and a hint of cumin and lime. It's hearty, flavorful, and ready in under an hour! Perfect for chilly nights, game day, or meal prep.
Ingredients
- Main: 1 lb (450g) boneless, skinless chicken breasts or thighs
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 jalapeño, seeded and minced (optional)
- 1 can (4 oz) diced green chiles
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 can (15 oz) Great Northern beans, drained and rinsed
- 4 cups chicken broth
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- Finish: 1/2 cup sour cream or Greek yogurt
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- To Serve: Shredded cheese, tortilla chips, avocado, green onions
Instructions
- Sauté veggies: In a large pot, heat olive oil over medium heat. Cook onion 5 minutes until soft. Add garlic, jalapeño (if using), and green chiles; cook 1 minute more.
- Add chicken and liquids: Stir in chicken, beans, broth, cumin, paprika, salt, and pepper. Bring to a boil.
- Simmer: Reduce heat and simmer 25–30 minutes, until chicken is cooked through and tender.
- Shred chicken: Remove chicken and shred with two forks. Return to the pot.
- Finish: Stir in sour cream, cilantro, and lime juice. Heat gently (do not boil).
- Serve hot: Ladle into bowls and top with cheese, avocado, green onions, and tortilla chips.
Tip: For a slow cooker version, add all ingredients (except sour cream, cilantro, and lime) to the crockpot and cook on Low 4–6 hours. Shred chicken and stir in finishers before serving!
