Ingredients
- Meatballs: 1 lb (450g) ground turkey
- 2 cups fresh spinach, finely chopped (or thawed frozen spinach, squeezed dry)
- 2 cloves garlic, minced
- 1/2 cup breadcrumbs (or gluten-free crumbs)
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil (for baking)
- Serving Ideas: Marinara sauce, pasta, subs, or as a standalone protein
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Mix ingredients: In a large bowl, combine ground turkey, spinach, garlic, breadcrumbs, Parmesan, egg, oregano, salt, and pepper. Mix gently with hands or a fork — don’t overmix.
- Form meatballs: Roll into 1-inch balls (about 20–24) and place on the baking sheet.
- Bake 18–22 minutes until golden brown and internal temperature reaches 165°F.
- Serve: Toss with warm marinara sauce and serve over pasta, stuff into a hoagie roll, or enjoy as a healthy snack!
Tip: For extra flavor, sauté the spinach and garlic in 1 tbsp olive oil before adding. You can also freeze uncooked meatballs on the tray, then transfer to a bag for later baking!
