  1. Activate yeast: In a bowl, mix warm water, sugar, and yeast. Let sit 5–10 minutes until foamy.
  2. Make dough: Stir in flour, salt, and melted butter. Knead 5 minutes until smooth. Place in a greased bowl, cover, and let rise 30–45 minutes until doubled.
  3. Shape bowls: Punch down dough. Divide into 6 pieces. Roll each into a ball and place in a greased ramekin, muffin tin, or on a baking sheet.
  4. Second rise: Cover and let rise 15–20 minutes.
  5. Egg wash: Beat egg with 1 tbsp water. Brush over the tops of the dough.
  6. Bake: Preheat oven to 375°F (190°C). Bake 18–22 minutes until golden brown.
  7. Serve: Slice open the top, hollow out the center (save for croutons!), and fill with hot soup.
