🍍 Grilled Pineapple Chicken Skewers
These **Grilled Pineapple Chicken Skewers** are a sweet and tangy tropical delight! Tender chicken and juicy pineapple chunks marinated in a honey-soy glaze, then grilled to perfection. They're perfect for summer BBQs, weeknight dinners, or meal prep!
Ingredients
- Skewers: 1 1/2 lbs (680g) boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 cup fresh pineapple chunks (or canned, drained)
- 1 bell pepper, cut into chunks (any color)
- 1 red onion, cut into chunks
- 8-10 wooden or metal skewers
- Marinade: 1/4 cup soy sauce (or tamari)
- 1/4 cup honey
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tsp sesame oil (optional)
- Pinch of red pepper flakes (optional)
Instructions
- Marinate chicken: In a bowl, whisk together soy sauce, honey, olive oil, garlic, ginger, sesame oil, and red pepper flakes. Add chicken and toss to coat. Marinate 30 minutes (or up to 4 hours in the fridge).
- Prep skewers: If using wooden skewers, soak in water for 20+ minutes to prevent burning.
- Thread skewers: Alternate chicken, pineapple, bell pepper, and onion on each skewer.
- Grill or broil: Grill over medium-high heat 3–4 minutes per side, basting with leftover marinade in the first few minutes (discard used marinade). Or broil 4–5 inches from heat, flipping once.
- Serve hot: Garnish with sesame seeds and chopped green onions. Serve with rice, salad, or grilled veggies.
Tip: For extra flavor, grill the skewers on a cedar plank. You can also bake them at 400°F (200°C) for 15–18 minutes if preferred!
