π₯ Nutty Maple Granola
This **Nutty Maple Granola** is crunchy, lightly sweetened, and packed with wholesome ingredients! Made with oats, mixed nuts, pure maple syrup, and a touch of cinnamon, it's perfect for breakfast with yogurt or milk, or as a healthy snack on the go.
Ingredients
- 3 cups old-fashioned rolled oats
- 1 cup mixed raw nuts (almonds, walnuts, pecans, cashews), chopped
- 1/2 cup pumpkin seeds or sunflower seeds
- 1/4 cup coconut oil, melted (or neutral oil)
- 1/3 cup pure maple syrup
- 1/4 cup honey
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 1/2 cup dried fruit (cranberries, raisins, or chopped apricots) β add after baking
Instructions
- Preheat oven to 300Β°F (150Β°C). Line a baking sheet with parchment paper.
- Mix dry ingredients: In a large bowl, combine oats, nuts, and seeds.
- Mix wet ingredients: In a small bowl, whisk together melted coconut oil, maple syrup, honey, vanilla, cinnamon, and salt.
- Combine: Pour wet mixture over dry ingredients. Stir until evenly coated.
- Spread & bake: Spread mixture in an even layer on the baking sheet. Bake 25β30 minutes, stirring once halfway through, until golden brown.
- Cool & add fruit: Let cool completely, then stir in dried fruit.
- Store: Keep in an airtight container at room temperature for up to 3 weeks, or freeze for longer storage.
Tip: For clusters, press the granola down gently before baking and donβt stir until the last 10 minutes. You can also add shredded coconut or dark chocolate chips after baking!
