Ingredients
- 2 large flour tortillas (10-inch)
- 1/2 lb (225g) ground beef or turkey
- 1/2 cup refried beans (canned or homemade)
- 1 tsp taco seasoning (homemade or store-bought)
- 1 cup shredded cheddar or Mexican blend cheese
- 1/4 cup diced tomatoes
- 1/4 cup sliced black olives
- 1/4 cup chopped green onions or red onion
- 1/4 cup chopped fresh cilantro (optional)
- Sour cream or Greek yogurt (for serving)
- Hot sauce or salsa (optional)
Instructions
- Cook beef: In a skillet over medium heat, cook ground beef until browned. Drain fat, then stir in taco seasoning and a splash of water. Simmer 2–3 minutes. Set aside.
- Warm tortillas: Place one tortilla on a baking sheet or pizza pan. Spread refried beans evenly over the tortilla, leaving a small border.
- Add meat & cheese: Layer seasoned beef over beans, then top with half the cheese.
- Bake: Bake at 400°F (200°C) for 8–10 minutes until cheese is melted and edges are crispy.
- Top: Remove from oven. Immediately top with remaining cheese, tomatoes, olives, green onions, cilantro, a dollop of sour cream, and hot sauce if desired.
- Second pizza: Repeat with second tortilla or cut in half to serve more.
- Serve warm: Slice like a pie and enjoy immediately!
Tip: For a crispier crust, lightly spray the tortilla with oil before adding toppings. You can also make mini versions using small tortillas for appetizers!
