Ingredients
- 1 lb (450g) breakfast sausage (pork, turkey, or plant-based)
- 1 (20 oz) package frozen shredded hash browns (thawed)
- 1 1/2 cups shredded cheddar cheese
- 10 large eggs
- 1/2 cup milk (or unsweetened almond milk)
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika (optional, for color)
- 1/2 cup diced bell pepper or green onions (optional, for freshness)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
- Cook sausage: In a skillet over medium heat, cook sausage until browned and no longer pink. Drain excess fat and spread in the baking dish.
- Add hash browns & cheese: Layer hash browns over sausage, then sprinkle with cheese and optional veggies.
- Make egg mixture: In a bowl, whisk eggs, milk, garlic powder, onion powder, salt, pepper, and paprika.
- Pour over: Carefully pour egg mixture evenly over the layers. Do not stir — it will settle naturally.
