🍯 Honey Sesame Chicken

Ingredients
- 1 1/2 lbs (680g) boneless, skinless chicken breast or thighs, cut into bite-sized pieces
- 2 tbsp vegetable oil (divided)
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1/3 cup honey
- 1/4 cup soy sauce (low sodium preferred)
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tsp cornstarch + 2 tbsp water (slurry, for thickening)
- 1/2 tsp red pepper flakes (optional, for heat)
- 2 green onions, sliced (for garnish)
- 1 tbsp toasted sesame seeds (for garnish)
Instructions
- Cook chicken: Heat 1 tbsp oil in a large skillet or wok over medium-high heat. Add chicken and cook 5–7 minutes until browned and cooked through. Remove and set aside.
- Sauté aromatics: Add remaining oil. Stir in garlic and ginger; cook 30 seconds until fragrant.
- Make sauce: Add honey, soy sauce, rice vinegar, sesame oil, and red pepper flakes. Stir to combine.
- Thicken: Stir cornstarch slurry into the sauce. Cook 1–2 minutes until thickened and glossy.
- Add chicken back: Return chicken to the pan and stir to coat in the sauce. Simmer 2–3 minutes to heat through.
- Serve: Garnish with green onions and toasted sesame seeds. Serve over steamed rice, quinoa, or stir-fry veggies.
