🍿 Frito Pie
This **Frito Pie** is a cheesy, hearty, and fun comfort dish — layers of seasoned ground beef, beans, and melty cheese served right in the bag of Fritos! It's a classic Tex-Mex favorite perfect for game days, potlucks, or quick weeknight dinners.
Ingredients
- 1 lb (450g) ground beef
- 1 packet taco seasoning (or 2 tbsp homemade blend)
- 1 (15 oz) can diced tomatoes & green chilies (e.g., Rotel)
- 1 (15 oz) can kidney beans or pinto beans, drained and rinsed
- 1 (8.5 oz) bag Fritos corn chips
- 2 cups shredded cheddar or Mexican blend cheese
- Optional toppings: sour cream, sliced jalapeños, green onions, avocado, cilantro
Instructions
- Cook beef: In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
- Season: Stir in taco seasoning and 1/4 cup water. Simmer 2–3 minutes.
- Add beans and tomatoes: Stir in beans and diced tomatoes with chilies. Heat through.
- Assemble: Open the bag of Fritos and push chips down to form an even layer.
- Layer: Spoon hot beef mixture over the chips. Sprinkle generously with shredded cheese.
- Melt cheese: Microwave the open bag for 30–60 seconds, or until cheese is melted. (Or broil in an oven-safe dish for 2–3 minutes.)
- Add toppings: Top with sour cream, jalapeños, green onions, or any favorites.
- Serve with a spoon! Scoop and enjoy straight from the bag.
Tip: For a baked version, transfer everything to a 9x13 baking dish, top with cheese, and bake at 350°F for 15 minutes. Great with a dollop of guacamole!
