🌯 Easy Freezer Breakfast Burritos
These Easy Freezer Breakfast Burritos are packed with scrambled eggs, sausage, cheese, and potatoes — the ultimate make-ahead breakfast! Simply wrap, freeze, and reheat in the microwave for a piping hot, satisfying meal in minutes. Perfect for hectic mornings!
Ingredients
- 1 lb (450g) breakfast sausage (or bacon, ham, or plant-based crumbles)
- 8 large eggs, beaten
- 1 (20 oz) bag frozen hash browns, thawed
- 1 cup shredded cheddar or pepper jack cheese
- 1/2 cup diced onion (optional)
- 1/2 cup diced bell pepper (optional)
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8–10 large flour tortillas (burrito size)
- 1 tbsp butter (for scrambling eggs)
Instructions
- Cook sausage: In a large skillet over medium heat, cook sausage until browned and crumbled. Drain fat and transfer to a bowl.
- Sauté veggies (if using): In the same skillet, add onion and bell pepper. Cook 3–4 minutes until soft.
- Add hash browns: Stir in thawed hash browns and cook 5–7 minutes until golden and heated through.
- Scramble eggs: Push hash browns to one side. Melt butter, add eggs, and scramble. Season with garlic powder, salt, and pepper.
- Combine: Mix sausage, hash browns, and eggs together. Stir in cheese until melted.
- Fill tortillas: Spoon 1/2 cup of the mixture onto each tortilla. Fold sides in and roll tightly.
- Wrap for freezing: Wrap each burrito first in parchment paper, then in aluminum foil or place in a freezer-safe bag.
- Freeze: Store in the freezer for up to 3 months.
- To reheat: Remove foil/parchment. Microwave on high for 2–3 minutes, flipping halfway, until heated through. For extra crispiness, finish in a toaster oven or air fryer.
Tip: Add salsa, sour cream, or avocado after reheating for extra flavor. Using low-moisture cheese helps prevent sogginess!
