  1. Prep chicken: Pound chicken breasts to even thickness. Season both sides with salt and pepper.
  2. Breading station: Set up three bowls: flour, beaten eggs, and a mix of breadcrumbs, 1/2 cup parmesan, garlic powder, oregano, and paprika.
  3. Bread chicken: Dredge each breast in flour (shake off excess), dip in egg, then coat in breadcrumb mixture. Press to adhere.
  4. Fry: Heat oil in a large skillet over medium heat. Cook chicken 3–4 minutes per side until golden brown and cooked through. Drain on paper towels.
  5. Add sauce and cheese: Place chicken in a baking dish. Top each with marinara sauce and mozzarella. Sprinkle with extra parmesan.
