  2. Cook the sausage: In a large skillet over medium heat, cook sausage, breaking it up, until browned and cooked through. Drain excess grease.
  3. Make the gravy: In the same skillet, melt 3 tbsp butter (or use some drippings). Whisk in flour and cook 1–2 minutes. Gradually whisk in milk until smooth. Simmer 5–7 minutes, stirring constantly, until thickened.
  4. Season: Stir in garlic powder, onion powder, salt, and pepper.
  5. Prepare biscuits: Cut each biscuit into quarters.
  6. Layer the casserole: In the baking dish, layer half the biscuits, half the sausage, and half the cheese. Repeat layers.
  7. Add gravy: Pour the hot sausage gravy evenly over the top layer.
  8. Bake: Cover with foil and bake 25–30 minutes, until bubbly and biscuits are golden.
  9. Garnish: Sprinkle with green onions if desired.
  10. Serve hot — perfect with fruit or hash browns!
