  1. Cook the beef: In a skillet, cook ground beef over medium heat until browned. Drain fat.
  2. Add seasoning: Stir in taco seasoning and water. Simmer 5 minutes until thickened.
  3. Warm tortillas: Heat tortillas in a dry skillet or microwave for 20 seconds to make them pliable.
  4. Fill and roll: Lay a tortilla flat. Add a line of beef, cheese, beans, and onion down the center. Fold in the sides, then roll up tightly from the bottom.
  5. Fry (Traditional): Heat 1/2 inch of oil in a deep skillet. Fry each chimichanga seam-side down for 2–3 minutes per side until golden and crispy. Drain on paper towels.
  6. OR Bake (Healthier): Preheat oven to 400°F (200°C). Place rolled chimichangas seam-side down on a greased baking sheet. Lightly spray or brush with oil. Bake 15–20 minutes until golden.
  7. Serve hot with sour cream, guacamole, and salsa!

Tip: Freeze uncooked chimichangas by wrapping in foil. Reheat in the oven at 375°F for 30–35 minutes!
