🌯 Beef and Cheese Chimichangas
These **Beef and Cheese Chimichangas** are crispy on the outside, packed with seasoned ground beef and melted cheese, and perfect for a quick, satisfying dinner. Serve with sour cream, guacamole, and salsa for a complete meal!
Ingredients
- 1 lb ground beef
- 1 packet taco seasoning (or 2 tbsp homemade)
- 1/2 cup water
- 4 large flour tortillas
- 1 1/2 cups shredded cheddar or Mexican blend cheese
- 1/2 cup refried beans (optional)
- 1/4 cup chopped onion (optional)
- Vegetable oil (for frying, if not baking)
- Sour cream, guacamole, salsa (for serving)
Instructions
- Cook the beef: In a skillet, cook ground beef over medium heat until browned. Drain fat.
- Add seasoning: Stir in taco seasoning and water. Simmer 5 minutes until thickened.
- Warm tortillas: Heat tortillas in a dry skillet or microwave for 20 seconds to make them pliable.
- Fill and roll: Lay a tortilla flat. Add a line of beef, cheese, beans, and onion down the center. Fold in the sides, then roll up tightly from the bottom.
- Fry (Traditional): Heat 1/2 inch of oil in a deep skillet. Fry each chimichanga seam-side down for 2–3 minutes per side until golden and crispy. Drain on paper towels.
- OR Bake (Healthier): Preheat oven to 400°F (200°C). Place rolled chimichangas seam-side down on a greased baking sheet. Lightly spray or brush with oil. Bake 15–20 minutes until golden.
- Serve hot with sour cream, guacamole, and salsa!
Tip: Freeze uncooked chimichangas by wrapping in foil. Reheat in the oven at 375°F for 30–35 minutes!
