🥟 Pierogi (Homemade Dumplings)
These **Pierogi** are tender homemade dumplings filled with creamy mashed potatoes and cheese, then boiled and pan-fried to golden perfection. A beloved Eastern European comfort food, perfect with sour cream, sautéed onions, or on their own!
Ingredients
- Dough: 2 cups all-purpose flour, plus more for dusting
- 1/2 tsp salt
- 1 large egg
- 1/2 cup sour cream
- 1/4 cup water (as needed)
- Filling: 2 cups mashed potatoes (cooled)
- 1 cup shredded cheddar or farmer’s cheese
- 2 tbsp butter, softened
- 1/4 tsp salt
- 1/8 tsp black pepper
- To Finish: 2 tbsp butter or oil (for frying)
- Sliced onions (optional, sautéed)
- Sour cream (for serving)
Instructions
- Make dough: In a bowl, mix flour and salt. Add egg, sour cream, and enough water to form a soft, smooth dough. Knead briefly, cover, and let rest 15 minutes.
- Prepare filling: Mix mashed potatoes, cheese, butter, salt, and pepper until well combined. Chill slightly for easier handling.
- Roll & cut: Roll dough thin (~1/8 inch). Cut into 3-inch circles using a glass or biscuit cutter.
- Fill & seal: Place 1 tsp filling in center of each circle. Fold over and pinch edges tightly to seal. Use a fork to crimp if desired.
- Boil: Bring a large pot of salted water to a gentle boil. Cook pierogi in batches 2–3 minutes until they float. Remove with a slotted spoon.
- Fry (optional): In a skillet, melt butter or heat oil. Lightly brown pierogi on both sides for extra flavor.
- Serve: Top with sautéed onions and a dollop of sour cream.
Tip: Freeze uncooked pierogi on a tray, then store in a bag for up to 3 months. Boil straight from frozen (add 1–2 min cook time)!
