🥨 Homemade Pretzel Rolls
These **Homemade Pretzel Rolls** are soft, golden-brown, and perfectly chewy — just like the ones from your favorite bakery! Made with a simple dough, boiled in a baking soda bath, then baked to perfection and topped with coarse salt. Perfect for sandwiches, sliders, or served warm with butter.
Ingredients
- Dough: 2 1/4 tsp (1 packet) active dry yeast
- 1 cup warm water (110°F)
- 1 tbsp sugar
- 2 1/2 cups all-purpose flour
- 1 tsp salt
- 2 tbsp butter, melted
- Boil & Finish: 1/2 cup baking soda
- 4 cups water
- 1 egg (for egg wash)
- 1 tsp coarse sea salt or pretzel salt
Instructions
- Activate yeast: In a bowl, mix warm water, sugar, and yeast. Let sit 5–10 minutes until foamy.
- Make dough: Add flour, salt, and melted butter. Stir until a soft dough forms. Knead 5 minutes by hand (or mixer) until smooth. Place in a greased bowl, cover, and let rise 30–45 minutes until doubled.
- Shape rolls: Punch down dough. Divide into 8 pieces. Roll each into a 10-inch rope and twist into a pretzel shape or roll into a round roll.
- Boil: Bring 4 cups water and baking soda to a gentle boil. Drop rolls in 2–3 at a time for 30 seconds. Remove with a slotted spoon and place on a parchment-lined baking sheet.
- Bake: Preheat oven to 425°F (220°C). Brush rolls with beaten egg, sprinkle with salt, and bake 12–15 minutes until deep golden brown.
- Serve warm: Best enjoyed fresh with butter or as sandwich buns!
