  1. Cook bacon: Cook bacon until halfway done. Drain on paper towels.
  2. Preheat oven: Set to 325°F. Place rack in lower-middle position.
  3. Sauté veggies: In a large skillet, heat 2 Tbsp bacon grease over medium heat. Sauté onion and pepper for 5 minutes until softened.
  4. Add remaining ingredients: Stir in beans, ketchup, molasses, brown sugar, vinegar, and mustard. Simmer briefly.
  5. Transfer: Grease a 13x9 baking dish. Pour bean mixture into it.
  6. Add bacon: Lay cooked bacon pieces on top of the beans.
  7. Bake: 2–3 hours, until desired consistency is reached.
  8. Rest: Let stand for 5 minutes before serving.

Tip: For extra flavor, use maple syrup instead of molasses!
